PALEO SAINT PATRICK’S DAY MEAL
I get way too excited about my holiday meals. I love creating themed foods for the holidays and St. Patrick’s Day is no exception. No, I’m not Irish or Catholic, but anytime I can create a delicious, healthy, fun-filled themed meal, I’m all about it.
So without further ado, here’s my Saint Patrick’s Day dinner plan. We have been absolutely loving these Reuben stuffed cabbage rolls. And that paleo shamrock shake?! Love. Love. Love.
I hope this inspires you to have a little fun and get a little creative for the holiday and hopefully you can try out some of these recipes that we’ve been loving, too.
Appetizer: Shamrock Peppers with French Onion Dip
Dinner: Cabbage Rolls – Reuben Style
Side Dish: Loaded Mashed Parsnips
Dessert: Shamrock Shakes
Can you say yum?! I can hardly wait to dig in.

We are Catholic and I have planned most of my St. Paddy’s day meal around your food above – except I replaced the corned beef (my husband hates it) with the pork you said was traditionally used. Thank you so much!
Now, I have a request. St Joseph’s Day is March 19th – Italian food and the color red being the theme. But I’m finding that paleo Italian food is sort of tricky. Are you game?

Ooooh Karyn, That sounds like a challenge I would love! You didn’t give me a lot of time, though. LOL!! I think I do have some ideas. Let me think about this some more and get back to you 🙂

The shamrock shake was a hit with four out of five of the kids – an impressive record. I just had to be careful that they didn’t see the avocado! It was great to have a treat; one of the trickier things with paleo is still being able to celebrate with a treat that isn’t filled with junk. Thank you!

Thanks, Laurie! ooooooo, how I used to love cadbury eggs!!!! I haven’t had them in sooooo long and the past few weeks I’ve been picking my husband’s brain and trying to figure out how we could make Paleo-fy them and get them molded, etc. We think we have some good ideas, but I’ve yet to actually try them yet. If you see them posted soon, you’ll know it worked 😉
